Vegan Recipe #4 Pinemilk Appleshake

Pacman strikes again

I haven’t been posting my Vegan Recipes in long time, I know, but that doesn’t mean I didn’t cook ;) I did, like a lot. I baked some cupcakes and muffins, cooked tasty und yummy stuff which I want to share with you, but I really did not have the time to post them. And actally I still don’t have :D But I am trying to type and show you the most… Even if I am on the road for 6 weeks I am trying to let my blog post them automatically ;) So dont wonder why I am posting recipes while I am gone for good :) And I’ll be back for good, too, hopefully with some new recipes and tipps for your trips!
Today in the morning I started my last day in my town with a whole Vegan Breakfast. I put a oven bread into the oven and had tomatoes, radish, cucumbers and olives on it :) Plus vegan butter.

But what I want to show you is my drink…

Pinemilk Appleshake

you take:

- 2 hands full with Pineapple

- 3 soup spoons with Soy- Vanilla Ice Cream (I used SoYeah!)

- ca. 100 ml of natural  Soy- Milk (I didn’t really measure I just used my sense of proportion)

mix everything with a handmixer- finish. Now you can serve it in a nice glass.

That was pretty easy, took at most 5 mins.

If you want to decorate the glass you can take a slice of a pineapple and put it on it!

Vegan Recipe #3: Macadamia Coooooookies

Finally I baked my first vegan cookies!!! They taste so good, but still, as with the other cookies I had, they are too crunchy… I like cookies more if they are soft and smooth :) So I have to try out, what I have to change making them like that. But Now I tell you how I made the first vegan cookies I’ve ever made :)

Ingredients:

1st part:

100 g washed(!!!) macadamia nuts
100 g vegan chocolate
100 g sugar
140 g vegan butter
50 g of grounded almonds
pinch of salt
vanilla sugar or real vanilla
1/2 teaspoon of cinnamon (don’t use more, trust me!)
1 table spoon of  apple purée (as alternative for 1 egg)

2nd part:

180 g flour
1 tea spoon of  baking powder

Preparation:

It’s pretty simple:

1. cut the washed macadamias into pieces you might think appropriate for your cookies

2. mix all the ingredients of the first part together, make them to a smooth dough (a cookie dough, haha)

3. now filter the flour and the baking powder over your dough making sure you don’t get any hard parts into your dough

4. heat the oven, I used 200° and turned it down when I put the cookies in to 180°

5. form your cookies as big as you want (I got 14 out of it)

6. put them into the oven and wash up ;)

7. after 15-20 minutes (please watch your cookies for every oven is an individual) put them out of the oven and let them cool down

8. enjoy your cookies with friends :)

Vegan repice #1: Special Salad

I always love salads of any kind. And I eat it like all the time as well :) I know, salads aren’t such a special meal but to create it vegan is, for some people, a challenge. So I show you one of my favorites right now.

Ingredients(for 1 very hungry person):

-1 hand full of field salad

-some tofu

-1 small onion

-1 carrot

-1/2 pomegranate

-1/2 Avocado

-sunflower seed

-walnuts

First cut your tofu into pieces and roast it gently with peanut oil (the taste of it fist perfectly to tofu), give it some salt and pepper, when finished lay aside.
Cut the onions into fine pieces and roast them gently, too (you can use them raw as well, but I don’t like it so much).
Cut all of the other ingredients as you like to. Cut the pomegranat into two halfs turn one piece upside down and hammer on it with a knife so that the cores get out (you use them…).

The dressing:

-olive oil

-brandy vinegar

-salt, pepper, some other spices or herbs you like

-mustard (my secret ingredient)

Enjoy your, maybe, first vegan meal!

Tofuuuu, I like youuuu

Hallo!

Hier folgt mal wieder nach langer Zeit ein Rezept von mir.

Ich war ehrlich gesagt ewig skeptisch mit Tofu und hab mich nie an den weißen Sojabohnenteig getraut; ich fand es in Restaurants eklig und labbrig und von Freunden suuuper lecker aber nicht möglich für mich nachzumachen.

Vor einer Woche, als ich meine Freundin Lisa in Hamburg besucht habe, haben wir Reis mit Gemüse udn Tofu gemacht und ich war total begeistert, so begeistert, dass ich mir direkt wieder Tofu gekauft habe, und ein eigenes Gericht gekocht habe, nicht schwierig aber sehr lecker :)

Zutaten:

Vollkorn Nudeln
Tofu (ca. 200g)
Erdnussöl (ich hab Sonnenblumenöl benutzt, da ich keins kaufen konnte)
1 Zucchini
getrocknete Tomaten
Walnüsse
Ingwer (frisch oder als Gewürz)
Salz
Pfeffer
Pesto

Zuerst werden die Nudeln ganz normal wie immer gekocht :) Währenddessen wird in einer Pfanne das Öl erhitzt. Erdnussöl erzeugt eine nussige Note beim Tofu, was ich persönlich sehr lecker fand. Den Tofu immer etwas umdrehen, dass er von jeder Seite leicht braun wird (so ist das labbrige Bissgefühl eigentlich weg und total lecker). Die Zucchini werden in Scheiben oder Stücken hinzugegeben und allmählich wird alles gewürzt. Die Walnüsse und Tomaten kommen zum Schluss hinzu.
Die Nudeln werden abgegossen, serviert und das Pesto kommt dazu, zum Schluss das Gemüse und der Tofu.

Ohne das Pesto (was ja Parmesan enthält) ist das Gericht auch vegan.
